SHRIMP SCAMPI
INGREDIENTS
1 1/2 lb Large Deviened Shrimp with shell and tail on
4 sprigs fresh thyme
8 cloves garlic
3 tbsp lemon juice
1 1/2 tsp cornstarch
s&p, butter
DIRECTIONS
Begin by removing shells and tails from shrimp and reserve. Add the shrimp to a bowl of salted water and refrigerate while making shrimp stock. To make stock, add shrimp shells and tails to a pot of boiling water with 2 tsp salt added. Bring to a boil, remove from heat, cover and let set 20 min. Melt 4 tbsp butter in a large skillet. Add 1 cup of shrimp stock. (save the rest for cooking liquid for rice or pasta) . Bring to a boil. Mix cornstarch into lemon juice. Add to the stock and butter mixture. Lower heat to med and add shrimp. Cook 5-6 min or until cooked through.
