3 pounds strawberries, washed, and cut up..add 4 cups sugar…bring to boil in pot with 4 cups water…
Blend berries in blender to make a “sludge”…pour into bowl, add 1 tsp lime juice, 1 tsp pectin enzyme (to clarify) , stir..

Go Swimming….until “sludge” cools to 90 degrees.

Pour “sludge” into bucket, take ½ packet of Red Star Montrachet yeast, add to ½ cup sterilized warm water…stir….add to “sludge”. Add 1 tsp of vital yeast nutrient (not absolutely necessary).Stir “sludge”, cover and set aside for three days…the yeast will turn the sludge into alcohol during this time..
Strain the “sludge” into a gallon jug, top off with water, place latex glove with hole in middle finger over top of milk jug, poke a hole in glove to allow carbon dioxide to escape as yeast continues to make alcohol. Secure with elastic band and let sit for a week….dead yeast will settle to the bottom of the jug and the “sludge” will begin to clear.
